Our wines are made from forty-year-old Syrah and Grenache vines.
The terroir is clay-limestone formed from sedimentary rocks, rich in stones and clays. It is surrounded by Caves and Avens
The harvest is 100% hand-picked, natural fermentation (indigenous yeasts) with no other inputs during winemaking. Soft “pigeages” and a few pump-overs are done during fermentation, and macerations last from 11 to more than 30 days.
Aging takes place 85% in vats and 15% in demi-muid (French oak) for 12 months.
Light filtration is carried out before bottling.
